Waste not, want not….

It is estimated that over 40% (almost every other piece of food) of food in America is not eaten but tossed out! Here are some tips on foods you can freeze (for several months!) to prevent our busy, eat-out-often, schedules from contributing to food waste.

You can freeze nuts, peanut butter, hummus, breads, muffins, and most fruits and vegetables. Some vegetables—including green beans, spinach, and broccoli—need to be “blanched” before freezing. Just steam them and let them cool before putting them into containers.

You can freeze milk, yogurt, cheese, and butter. I did not know you can also freeze eggs. This quick little video suggests breaking eggs into individual sections in a cup cake tin, then removing them after they are solid, wrapping them individually for easy use.

Love those fresh herbs? Chop them up, and freeze them in an ice cube tray. You can cover them with water or foil.

This week, be aware of other ways you can be a good steward of the planet. We want to leave a legacy for our children and grandchildren and their children and grandchildren.
