The Super Food: Pumpkins

While most of us have enjoyed carving pumpkins since we were children, the health benefits of pumpkins may have been missed.

Pumpkins are high in Vitamins A and C and E, and they contain magnesium, potassium, and zinc. Pumpkins contain carotenoids, knowing to help prevent premature aging and create healthy skin. Carotenoids also protect your eyes from free radical damage (thus preventing the forming of cataracts).

Daily servings of pumpkin might just prevent depression due to the high levels of L-tryptophan, the chemical compound that helps lift moods and create feelings of well-being.

Pumpkin seeds (also known as Pepitas) are rich in essential fatty acids, and an excellent source of plant protein. Just one ounce of pumpkin seeds contains almost 7 grams of protein. The oil in the seeds is high in phytosterols, which can actually replace cholesterol in your body, and help in reducing your cholesterol levels.

Natural diuretics, pumpkins wash toxins out of your system, helping to prevent kidney stones, while giving you glowing skin, promoting both inner and outer beauty.

For sure, pumpkin is an excellent source of fiber, providing three grams in a one-cup serving.
