I don’t think I have ever posted a recipe in my Tips for Well-being but these “Penguin Poppers” are just too cute to not share!
Take 18 pitted jumbo black olives. Cut a slit from top to bottom, lengthwise, into the side of each olive. Carefully insert about 1 teaspoon of softened cream cheese. Slice a carrot into 18 1/4 inch think rounds; cut a small notch out of each carrot slice for the feet. Save the cut out pieces and press them into the center of 18 small olives you have cut a slit into to form the beaks.
You can see how easily you can assemble them, securing them with a tooth pick.
This week, find ways to make art out of everything. Hum a tune as you brush your teeth. Plate your food mindfully. Sign a card with a crayon. Let everything you do be gluten free fun!
