When Dr. Tom O’Bryan presented on Dietary ‘Fueling’ of Neurological Disorders at the International College of Integrative Medicine conference in Columbus, Ohio, I did not expect to hear him speak with such fervor, saying, “Health begins in the gut. Death begins in the colon.” I was pretty amazed about cases of reversing ALS symptoms on a gluten free diet. Actually, he said that when the cause of neurological difficulties is unknown, 70 percent of the time the culprit is gluten.
“The gut is the largest part of our immune system” explains Drew Ramsey, M.D., author of The Happiness Diet and 50 Shades of Kale. So it matters what you put in it. “Sugar and refined carbohydrates cause damage, while fermented foods heal.”
According to Jennifer Kass of well + GOOD NYC, here is a list of 7 fermented foods you should be eating:
Coconut yogurt
Tempeh
Miso
Sauerkraut
Pickles
Kimchi
Kombucha
Although I knew about pickles, miso, and sauerkraut, I admit I had to look up the rest of these. For example, I found out that kombucha starts out as a sugary tea, which is fermented using a culture of bacteria and yeast. It is described as a refreshingly fizzy, slightly sour fermented (but mostly non-alcoholic) beverage that is relatively low in calories and sugar.
Kimchi is a Korean napa cabbage dish, made by a similar process as sauerkraut and dill pickles.
Coconut milk yogurt is a fabulous option because it not only fermented, it is also dairy free.
This week, when our culture will be handing out candy to children, we can all make the choice to at least choose to eat foods without sugar or refined carbohydrates.
