Eggs are one of those foods that once fell out of favor but are now reconsidered for their nutritional value. When I eat or cook with eggs, I prefer farm-fresh and free-range eggs, but if you are cooking vegan, here is a handy egg substitute: chia seeds!
I learned about this from a nutritionist who wanted to bring a safe, mayo-based salad to a potluck, and, yes, these are the same seeds that make those Chia Pets grow. You should be able to find them in just about any health food store. You will appreciate that they are are loaded with calcium and magnesium, rich in omega three’s essential fatty acids, and high in fiber. Plus they are both gluten- and grain-free, for those who are sensitive.
To make your simple egg substitute, choose the black seeds. Here is the recipe :
For each egg you will replace, use 1 tablespoon of chia seeds to 3 tablespoons of water. Let them soak for about 15 minutes, then stir (they will be quite gooey), and use them as you would use eggs in baking or homemade mayonnaise or salad dressing.
This week, get creative! Notice how easily one thing can be substituted for another to help you be more and more healthy.
