Where's the Beef?

Debra’s Wellness Tips

In “If Everyone Ate Beans Instead of Beef” Helen Harwatt, a researcher trained in environmental nutrition, and a team of scientists from Oregon State University, Bard College, and Loma Linda University calculated just what would happen if every American made one dietary change: substituting beans for beef. They found that if everyone were willing and able to do that—hypothetically—the U.S. could still come close to meeting its 2020 greenhouse-gas emission goals, pledged by President Barack Obama in 2009.

There are so many varieties of beans, and beans can be used in very creative and delicious dishes. Many free resources are available online to help you enjoy the health benefits of beans: Full-o-Beans Cookbook, The Bold and Beautiful Book of Bean Recipes, and Spillin’ the Beans.

This week, download some free recipes and begin to prepare at least one new bean recipe each week. Enjoy making a positive contribution to the health of your body and the planet.
