Whether you are celebrating Easter as a religious holiday or a secular opportunity to enjoy time with friends and family, no wellness tip posted on Easter would be complete without mention of eggs!

I am not talking about those sugary, sickening sweet, mallow eggs, nor the chocolate and caramel Cadbury variety, I am singing the praises of farm-fresh eggs!

A boiled egg contains about 75 calories, 5 grams of fat, and roughly 60 milligrams of both sodium and potassium.

Hard boiled eggs in the shell stay fresh in the refrigerator for up to a week. Here are some yummy suggestions for using left-over boiled eggs:

  • Classic Deviled Eggs (Made with mayo, mustard, and a sprinkle of paprika.)
  • Curried Egg Sandwich (All you need is some mayo and curry powder. Or add fresh chives!)
  • Cobb Salad (Lettuce, tomato, cheese, optional meats, and your favorite healthy dressing.)
  • Egg Muffin (English muffin, sliced tomato, cheese slice—toasted and served open faced.)

This week, celebrate every day as holy. I know a few chickens who are willing to help!
